Traveling over the holidays. I'm really never in the mood to travel initially, but once packed and on the road, I'm OK. This year we the whole family got flu shots early (beginning of November) prior to the shortage. Wonderful, no flu. But colds out the wazzoo!!! Hubby sick and 2 of the boys. Me and 2 remaining boys will be inclement I'm sure. My husband NEVER gets sick, so it's unusual to see him down,But we're at our holiday destination, enjoying time with family and friends. That's what it's all about. Seasons Greetings! KB

Christmas Morning Cinnamon Buns
|
|
[b]Don't let the name fool you...these cinnamon buns are good ANYTIME. I've been making them every Christmas morning since I got them out of Better Homes and Gardens December 1996 issue.
Here's the recipe:
As a gift of time for the elf in charge of Christmas breakfast, make and shape these rolls the day before, then chill in the refrigerator.
-3 1/2 to 4 cups all purpose flour
-1 pckg. active dry yeast
-1/3 cup milk
-1/3 cup sugar
-1/2 tsp. salt
-1 egg
-2 Tbsp. margarine or butter, softened
-3/4 cup packed brown sugar
-2 tsp. ground cinnamon
-1/2 cup chopped nuts (i use pecans)
-4 tsp. half and half or light cream
-u can add 1/2 cup of raisins..this is optional
In a large mixing bowl stir together 1-1/2 cups of the flour and the yeast; set aside.
In a small saucepan heat milk, 1/3 cup margarine or butter, sugar, and salt till warm and margarine or butter is almost melted. Add to flour mixture. Add egg. Beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can. Turn dough out onto a lightly floured surface. Knead in of the remaining flour to make a moderately soft dough that is elastic (3 to 5 minutes total). Shape dough into a ball. Place dough in a lightly greased bowl; turn once. Cover; let rise in a warm place till double (1 to 1-1/2 hours).
Punch dough down. Turn dough onto a floured surface. Cover; let rest 10 minutes. Roll dough to an 18x10 inch rectangle. Spread with softened margarine or butter. Combine brown sugar and cinnamon; sprinkle onto dough. Top with chopped nuts.
Tightly roll up, jelly-roll style, starting from one of the long sides. Pinch seams to seal. Cut dough crosswise into 12 slices. Arrange slices, cut sides down, in a greased 13x9x2-inch baking pan. Cover and let rise till nearly double (about 30 or 40 minutes).
Or, skip the second rising and cover with oiled waxed paper, then with plastic wrap. Chill in the refrigerator for 2 to 24 hours. To bake, let stand for 20 minutes at room temperature. Uncover and puncture any surface bubbles with a greased wooden toothpick.
Brush dough with half and half or light cream. Bake in a 350 degree oven for 25 to 30 minutes or till golden. Invert rolls onto a wire rack or serving platter. Cool slightly. Makes 12 rolls. If you cut thinner, you can make more, but don't cut too thin.
Enjoy!
ps. i'll post pictures of my latest batch as soon as i upload them onto the computer.

Saturday in December

OK, so I still haven't gotten around to decorating the house yet. The Christmas tree is waiting for me to dress it up. There are no lights or pine garland decking the halls. Matter of fact, I still have fall leaves lining my exterior door. What is it about this time of the year that makes me such a slacker? I had every intention of dawning the dormitory with Christmas cheer. But mind you I have kids and as much as I'd like to paint a merry picture of trimming the tree and hot cocoa and holiday jazz playing in the background, the simple truth of the matter is that it's a real pain in the ass. The kids are impatient bc I have to find just that right angle for the tree and the kids want to decorate. My husband complains about the "freakin lights" and huffs n pisses when I ask him to get a box for me or help me in some way. And really, I appreciate the childrens' input, but I can't give them free reign over decorating. I hate gold tinsel and no son, I don't think the dog wants to wear a Christmas hat. As many years as I spend throwing out the paper thin glass ball ornaments, they multiply in the attic and I can look forward to time with the dust pan n broom cleaning up their broken mess. Did I mention that it's still raining? So that, combined with the fact that we have no ladder, is making it hard to find the motivation to hang the lights and fix the exterior up. I think I'll end up tossing one of my kids up on the roof and playing a game of catch the strand of lights when I throw it to you. I'm mostly kidding on that last sentence. My mother-in-law would kill me. So maybe I'll just wait until Monday. I have the day mostly free and no kids in the house.
Oh ya, the main point of this quip, we were supposed to "Christmasize" the house on Saturday but then I saw that there was all these holiday events going on locally. And the best part is that the museums in the area were free. ( military budget x 4 kids ). Hubby said good thing the childrens museum was free bc the place had been abused by kids and everything was busted. That's his way of saying that he would have been way pissed if we'd paid to get in. I figured the Christmas tree could wait. And I found my motivation while walking around listening to carolers and street musicians, and marshmellows burning over an open fire and the one-horse open sleigh, and the kids bundled up in cool crisp air....Now I'm in the mood for Christmas.
Come Monday, I'll have the house looking like the Biltmore on Christmas Eve! I'll have hot cocoa and warm chocolate chip cookies ready for the boys when they come home from school. I'll even let them decorate the tree anyway they want it-no gold tinsel though, please. I'll burn cinnamon potpourri on the stove. I'll flare up the gas logs. Maybe I'll even sit down and write out my Christmas cards. We'll see. Don't hold me to it. You never know what could happen between now and then.

pictures from a recent outing. Did I mention that we're a military family? whenever anyone visits, we have the standard places (airplane parks, retired ships) where we go. So much has changed since 9/11 and the war. We used to take company to tour active ships, but no more.
Hubby takes leave for the holidays soon. I'm loving shore duty. This is the longest time that he's been home in....well, in as long as I can remember. We go home to NC for Christmas. We're on a "military budget" this year. That means that we're broke. Bush has been pretty good to us. I still wouldn't complain if he decided to throw a Christmas bonus our way. Ah, listen to me. My bonus is that I have my husband home with the family and not overseas fighting in this war.

started psychology online last night. nice group of people. better mention that. i gave them this link. so i think online learning will be refreshing. i hate my drive to school. it's about 50 miles round trip for me. VA traffic sux and it's just a boring drive....gets very monotonous. Of course the boys needed everything from me when i was "in class". never fails. Husband camped out in room, yelling for boys to sleep when they were talking from their rooms past bedtime. Dog had fun attacking oldest. He was blowing in her face. She was justified. Twinz decided to sleep on the floor as opposed to making beds. I had just washed their sheets. Found artwork on This End Up Bed using permanent black marker on wood. Grrr...Now if I get mad and yell, does that mean that I'm inflicting potential damage to his artistic freedom? Let me know. Then went upstairs to oldests' room and had a heart attack. His room was in shambles. He blamed it on the earthquake that hit VA a few days ago. I'm not sure if I believe him. So, I'm thinking about quiting school and any hobbies and totally dedicate myself to being a full-time maid to my house. I think it's the only way.
